Drop spinach in rapidly-boiling water, bring back to a boil,
and cook 2 minutes. Drain and rinse under cold running water.
Drain again, and squeeze out most of the water.
Heat oil in a wok over medium-high flame. Stir-fry the
garlic until golden. Add spinach and fry for 3 minutes.
Add the nuoc mam a tsp. at a time, stirring and tasting so as not
to get too salty. Cook another minute and serve hot.
