German bakers are so persnickety it drives me crazy! Roll them out to an inch across, then slice them just 1/4 inch thick. Put them on the sheets, 3 dozen on the big one, 20 on the little one. Bake for 22 minutes, no more, no less.
Ahhh, but the aroma of these cardamom flavoured cookies, leavened with just a touch of Hartshorn (ammonium carbonate: who but a German would think of putting smelling salts in cookies?) is exquisite! 18 dozen of them will hit the cooling racks before the sun reaches the zenith.
