The Great E Scape

I've been planting hard-shelled garlic for a few years, but nobody told me that you can (and should) harvest the long tops of them while still green. Called "scapes", their harvesting makes the cloves grow bigger. And they are quite tasty, with a mild garlic flavour. So if you're cooking something françois for Bastille Day today, throw in some of this!
